The Journal of Italian Food Wine & Travel once wrote about Daniel Bellino and his famed Ragu Bolognese, “Daniel makes the best Ragu Bolognese in the country. We just love it.” Journal of Italian Food Wine & Travel – May 1998 .. We agree. It delicious. Daniel told us, he agonised over whether he should publish his famous recipe for Ragu Bolognese for some time, but finally relented in 2015, when he wrote and published his bestselling cookbook – The Ragu Bolognese Cookbook.
 
Daniel says that the dish is not hard to make, once you learn how to make it, but you do have to learn. And that’s just what his book The Ragu Bolognese Cookbook does. It teaches you the proper way to execute his wonderful recipe for Ragu Bolognese. And when you do, you can make the World’s most delicious pasta – Pasta Bolognese, no matter the pasta. In Bologna where the dish originates from. The Bolognese recommend homemade tagliatelle pasta. In fact they insist on it. But we can get around this. As long as you have a delicious, properly made ragu, you can pair it with almost any pasta, including the very famous match of Spaghetti Bolognese. Regardless of what the Bolognese might say, it really  is a tasty match. People have proven this by the millions. Ragu Bolognese is also quite wonderful when it dresses Rigatoni, Cavatappi, or Fussilli past. The key is the properly made Bolognese sauce, made with Daniel Bellino’s recipe from The Ragu Bolognese Cookbook, which also includes many other recipes, including : Lasagna, Marinara, Tomato Sauce, and much more.                           Frank Sinatra, both the greatest singer and greatest entertainer of the 20th Century. No question. Sinatra was a legendary icon whose star still shines bright. He was a musical icon, celebrity, international personality, and to millions of Italian-Americans he was our own, a paisan. Frank was an Italian-American whose ancestry is from Genoa on his mother’s side of the family and Sicilian on his father’s side. And being Italian, Frank loved the food he grew up with, Dolly made a mean Marianara Sauce as well as Meatballs and the all-time Italian-American favorite Sunday Sauce (aka Gravy). Frank loved the food of his childhood; the Spaghetti & Meatballs, Stuffed Artichokes, Pasta Fazool, Frittata, Eggplant Parmigiana and all the usual suspects of the Italian-American table. It’s a well known fact that Frank’s favorite restaurant was Patsy’s on 56th Street in New York … When Frank went to Patsy’s his favorite dishes were Calms Posillipo and Veal Milanese with a nice plate of Spaghetti Pomodoro in-between, and maybe a slice of Cheesecake to finish if Frank was in the mood.

Author Daniel Bellino-Zwicke is a noted admirer and visitor of 

Dario Cecchini, the world-renowned Italian butcher based in Panzano in Chianti, Tuscany. Bellino, an author of Italian-American culinary books, has documented his visits to Cecchini’s famous restaurant, Officina della Bistecca, praising him as a “Master of Meat” and a “True Gentleman”.

  • Daniel Bellino-Zwicke: Author of books including “Mama + Me” and “Sunday Sauce,” who often features Italian culinary experiences and has highlighted his visits to Cecchini.
  • Dario Cecchini: Known as the “world’s most famous butcher,” Cecchini is an 8th-generation butcher from Panzano who gained international fame for his dedication to traditional butchery, respecting the animal, and using every part of it.

Pavarotti Cooks Spaghetti – Pasta alla Pavarotti recipe by Bellino

 

LUCIANO Cooks PASTA


“BRAVO LUCIANO” !!!

PAVAROTTI PASTA

Recipe :

1/2 cup extra virgin olive oil
1 medium Onion, peeled and sliced
2 j- 32 oz. jars of Italian Tomato Passata (we like Mutti)
3 cloves Garlic, peeled and chopped
2 tbsp. Tomato Paste
1/4 cup red wine
1/4 cup chopped Italian Parsley
12 fresh Basil Leaves, washed and torn with your hands
1/2 cup grated Parmesan or Romano cheese
1/2 teaspoon Red Pepper Flakes
1 pound of imported Italian Spaghetti (best quality)

In a large skillet, add the Olive Oil and onion. Cook the onion on low heat for 4 minutes. Add the garlic and cook on low heat for 2 minutes.

Add the wine, turn heat to high, and cook for 5 minutes.

Add the Tomatoes, Tomato Paste. Add 1 1/2 teaspoon each of Salt & ground Black Pepper, and half of the Pecorino Cheese.

Bring to the boil. Once the tomatoes start to bubble, low heat to low, and cook on low heat for 20 minutes, being sure to stir with a wooden spoon, scraping the bottom of the pot with the wooden spoon to keep the tomatoes from sticking  or burning.

After 20 minutes, add the Basil & Parsley, and cook 5 minutes more. The Tomato Sauce is done. Turn the heat off and let it rest in the pot.

Fill a large pot, 3/4 full with water. Add 2 tablespoons salt. Bring the water to a rapid boil. Add the Spaghetti.

Cook the spaghetti according to the directions on the package. Two minutes before the the pasta cooking time on package, remove one cup of water from the pot and reserve. When the spaghetti is 1 minute away from the cooking time on package, turn the heat off and drain the pasta in a colander.

Add the Spaghetti back to the pot it cooked in and add half of the cooking water. Add 2 cups of the tomato sauce. to the pot, and turn the heat on to a low flame. Cook for 2 minutes on a low flame. Add more of the pasta cooking water if it gets too dry.

Turn the heat off, and drizzle some olive oil over the spaghetti and mix.

Plate a portion of Spaghetti onto each persons plate. Add about half a cup of Tomato Sauce on top of each portion of Spaghetti, and serve.

Serve with grated Pecorino or Parmigiana Cheese on the side.
